Banana Pudding With Coconut Whipped Cream & Toasted Pecans
When dieting you always crave something creamy that is not yogurt. Try this creamy Banana Pudding. It’s good but an overnight process and it is worth the wait, I promise
Ingredients:
- 1 Can of coconut milk chilled
- 1 Tablespoon of Maple Syrup
- 1 tsp of Vanilla extract
- 1/2 tsp of cinnamon ( Optional)
- 2 Ripe Bananas
- 4 Egg yolks
- 2 Cups of coconut Milk
- 1/4 cup of honey
- 1/4 cup of arrowroot or Tapioca powder
- 1/2 tsp salt
- 1 tsp of vanilla extract
Directions
- Chill the can of coconut milk overnight
- Remove the Fatty Coconut cream ( The Hard Part) that separated from the coconut water and place in a bowl, set water aside
- Add the syrup, cinnamon and Vanilla and mix till fluffy. Refrigerated till ready to serve
- In a bowl mash your banana till desired consistency set aside
- In a separate bowl add your egg yolks, honey, flour mix well set aside
- In a saucepan add your coconut milk
- once warm add your egg mixture
- No here is the long part whisk till it thickens
* Note since you are not using cornstarch (Not Paleo friendly) it will take much longer for your pudding to thicken. Be patient the outcome is amazing. I was whisking for about 8-10 minutes*
- Once you have desired thickness remove from stove and add your mashed bananas
- Mix together and refrigerate till cold
- Top with your homemade coconut whip cream , Desired nuts and cacao nips
