Creamy Shrimp & Spicy Zoodles with Shrimp and Chicken
The hardest part about being a beginner on the Paleo diet is missing the pasta dishes. But hell has no fury then a woman on a mission for her pasta. You will love this recipe as much as I did. True story before my 1st bite I say a little chant ” Please let this be good, please let this be good, please let his be good” And this folks is fire. Let’s begin our road to health with some yumminess.
Ingredients
- 2 Large Zucchini Spiralized
- 1 pound clean and deveined fresh shrimp
- 2 Large Boneless Chicken breast
- 6 garlic cloves diced and Chopped
- 1 Jalapeno pepper chopped
- 1 Tbsp crushed red pepper flakes ( Add 2 if you like it very spicy)
- 1 Tbsp of smoked paprika
- 1/2 Red pepper, green peppers chopped
- 1/4 cup of cilantro
- 1/2 cup of coconut milk
- 1 Tbsp of lemon pepper
- 1/5 cup of lemon juice
- 1/5 cup of veggie or chicken broth
- 3 Tbsp of olive oil or coconut oil
- 1 Tbsp of all spice
- 2 Tbsp of Ghee
Directions
- Put Zucchini in a bowl with cold water and 1tbsp of lemon Juice 1tbsp of all spice set aside
- In a bowl add shrimp lemon pepper and red chili pepper set aside
- In a frying pan add 1 Tbsp of Olive Oil once hot add Chicken, Garlic, Onions, Peppers, Cilantro and sprinkle with the smoked paprika
- Once Chicken is cooked, remove from pan and set aside
- Add 1tbsp of olive oil to the hot pan and add shrimp till done. Remove from pan set aside
- Add 2tbsp of ghee, coconut milk, veggie broth and lemon juice ( Add additional tbsp of red chili pepper flakes if you want it very spicy)
- Add your Zucchini noodle ( Make sure water is drained 1st) Toss till cover is sauce
- Add you chicken and shrimp to the pan, toss and mix well.
- Cover and let it cook for 5-10 minutes depending on how soft you like you Zoodles
*Note, If you need more sauce double up on your coconut milk ghee lemon juice
