Sauteed Kale Spinach & Mushroom
Ingredients
- 4 garlic cloves chopped
- 3 tablespoon of olive oil
- 1/2 cup of red onions
- 3 cups of spinach
- 3 cups of kale
- 1 tsp of onion powder
- 1 tsp of salt
- 1 cup of mushrooms chopped
*Note I chop the mushrooms small, my daughter is not a fan of it, you can leave halved, if you do it will be 2 cups of mushrooms*
Directions
- In a large skillet or frying pan add olive oil
- Once hot toss in salt, mushrooms, garlic and onions. Cook till soft
- Add rinsed kale, and mix well. Place top and allow kale to cook down about 3-4 minutes
- Add Spinach and onion powder, mix well. Again place top and allow to cook down for 8-10 minutes
Goes great with butter garlic linguine pasta.
