Shrimp fried rice
Ever made too much rice and you don’t want to throw it away, BUT you don’t want that same taste. Here is the perfect recipe for you that you will love
Ingredients:
- 2 cups of cooked rice
- 1/2 cup of salted pork ( optional)
- 1/3 cup of scallions
- 2 Tablespoon of olive oil
- 2 eggs
- 1/2 lb of cleaned shrimp
- 1/4 cups of chopped onions
Directions:
- Cut up 1/2 cup of salted pork into tiny chunks, Set Aside
- In a bowl add shrimp and sprinkle with salt a pepper. Set Aside
- In a frying pan add olive oil
- Once hot add salted pork, cook on high till partially cooked
- Add onions and scallions saute with the salted pork for about two minutes
- Add shrimp once it starts to turn from grey to pink scramble eggs and add to pan along with rice.
- Mix well and cover, cooking on low heat for about 6-8 minutes or until eggs are fully cooked.
