Lemon Meringue Pie

• Pre-heat oven to 325
• Spray/grease pan with butter.
  
• Apply crust to pan .
  
• Put in oven let cook for 10 mins take out the oven and set aside to cool. 

• Pre-heat oven to 400 
• Please separate 4 eggs, Egg yolk in one bowl, Egg whites in another
• Moving on to a saucepan  combine 1 ¼ cups of sugar
  
• ⅓ cup of cornstarch
  
• ¼ teaspoon of Salt,
  
• Slowly add in  1 ¼ cups of water.
  
• Slowly stir on low heat for about 10 mins.
  
• Once mixture starts to thicken add the egg yolks to the pot and ½ cup of lemon juice.
  
• Take a lemon and grab your cheese grater and zest your lemon into the pot.
  
• Cook for 2 minutes continuing to stir,
  
• Remove from heat and add filling into your pie crust.  Set aside
• In your Mixer add your egg whites and ½ of teaspoon of cream of tartar to your bowl ( sometimes I forget to add it so if you don’t have it no worries still taste the same to me)
  
• Mix on low once egg whites start to form measure out ½ a cup of sugar grab a teaspoon and sprinkle in the sugar a little at a time about every 30 seconds till all is added

***NOTE DO NOT ADD ALL THE SUGAR AT ONCE, YOUR MERINGUE WILL FALL***

• Once your meringue is mixed add your filling, making sure it is coated all over to the edge of your pie pan.
• Pre-heat oven to 400 and cook for 30 minutes or until meringue is dark enough to your liking.
