Crumbled Banana Pudding

Banana Pudding Crumble
INGREDIENTS
- 2 large eggs
- 6 tablespoon of sugar
- 1 1/2 tablespoons flour + 1/4 cup of flour
- 2 tbsp of cornstarch
- 1/2 teaspoon salt
- 1 1/2 cups whole milk
- 1 teaspoon vanilla extract
- vanilla wafer cookies whole
- 2 large bananas, (peel them after you roast them before you slice them)
- 1/2 cup of crumbled vanilla wafers
- 1/2 of brown sugar
- 3 tablespoon of unsalted butter
- 1/4 cup of flour
Directions
- Preheat the oven to 350.
- Place unpeeled bananas on a baking sheet and bake for 10 minutes.
- Remove from oven and let cool.
- Once cool, slice the bananas.
- Turn oven temperature up to 425.
- Butter baking dish. Set aside
- In a large bowl combine 3 tablespoon of sugar, 1 1/2 tablespoons flour, cornstarch and salt. Mix together.
- Take 1 of the eggs and separate the yolks from the whites. Set the white aside and eat later or discard.
- Add the remaining whole egg to the egg yolks.Proceed to add the egg yolks to the sugar mixture and mix well.
- Stir in 4 tbsp of milk.
- Heat 1 cup & 4 tbsp of milk in a medium saucepan, when the milk is warm whisk in the sugar and egg mixture.
- Cook on medium heat, uncovered until thick. Stirring occasionally
- Remove from heat and add in 1 teaspoon of vanilla.
- In butter baking dish add enough vanilla wafers to cover the bottom of your pan
- Cover the wafers with half of the banana slices.
- Cover the banana slices with half of the pudding mixture.

- Add another layer of vanilla wafers followed by a layer of banana slices and then finish off with a layer of pudding.
- In the bowl mix together brown sugar crumbled vanilla wafers, flour and butter. Mix well
- Spread the crumble over the top of the pudding
.
- Place into oven for about 15 minutes
- Serve hot or cold. But I prefer cold
