Sweet Plantains Lasagna
- 4 Sweet Plantains (Yellow and Black the darker the better)
- 1 Green & 1 Red pepper Chopped
- 1 Small Onion Chopped
- 4 Cloves of Garlic Chopped
- Mozzarella Cheese or any other cheese you prefer
- 1 Tbsp of Adobo
- Ground Meat
- ¼ cup of Chopped Cilantro
- Tomato Sauce
- 2 Tbsp Vinegar
- 2 Eggs
- 2 Tbsp Milk
- 1 Package of Sazon
Directions
- Preheat oven to 350, butter your pan…set aside.
- In a frying pan add 2 tbsp of oil.
- Once Pan is hot add the following:
- Peppers
- Onions
- Garlic
- Cilantro. Let cook on high for 5 minutes, stirring occasionally
- Add your ground meat, adobo, vinegar and sazon to the pan.
- Cook meat till brown
- Add your tomato sauce cook on low for 10 minutes.
- Slice your plantains down the middle and remove your banana. It will be a little slippery so be careful.
- With your knife slice your banana in long strips… Set aside
- In a frying pan coat the bottom with vegetable oil. Onec hot, add your strips one by one to the pan.
- Fry on each side for 2-3 minutes or until brown… Set Aside.
- Grab your buttered pan and Add sauce to the bottom of the pan and layer your plantains.
- Add sauce on top and coat with the cheese of your choice *Repeat* 2 or three times leaving your last layer topped with sauce. Set Aside
- Take a bowl add 2 eggs and 2 tbsp of milk. Mix well and pour all over dish.
- Add Cheese and sprinkle with dried basil and pepper
- Let sit for about 10 minutes for eggs to soak through to the bottom
- Place in oven and bake for 20 minutes.
Goes great with Spanish Rice & Beans
